The warm flavors of cinnamon and maple syrup make them irresistibly tasty.

Ingredients:

  • 2 medium apples, peeled, cored, and diced
  • 2 eggs
  • 2 tablespoons coconut flour
  • 2 tablespoons almond flour
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 1/4 teaspoon baking powder
  • Coconut oil, for frying

Instructions:

In a mixing bowl, whisk together the eggs, coconut flour, almond flour, maple syrup, cinnamon, and baking powder until well combined

Fold in the diced apples until evenly distributed throughout the batter

Heat coconut oil in a skillet over medium heat

Using a spoon, drop dollops of the batter into the hot oil, shaping them into fritters

Cook for 2-3 minutes on each side, or until golden brown and cooked through

Remove fritters from the skillet and place on a paper towel-lined plate to drain any excess oil

Serve warm and enjoy!
