Shrimp Creole Soup with Bacon and Cheddar Dumplings



This Shrimp Creole Soup combines the flavors of a classic shrimp Creole with comforting dumplings infused with bacon and cheddar cheese.

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 6 slices bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 celery stalk, diced
  • 1 can 14
  • 5 oz diced tomatoes
  • 4 cups chicken broth
  • 1 cup okra, sliced
  • 1 tsp Cajun seasoning
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup milk
  • 2 tbsp chopped parsley

Instructions:

In a large pot, cook bacon over medium heat until crispy

Remove bacon and set aside, leaving bacon fat in the pot

Add onion, garlic, bell pepper, and celery to the pot

Cook until vegetables are softened, about 5 minutes

Stir in diced tomatoes, chicken broth, okra, and Cajun seasoning

Bring to a simmer

Add shrimp to the pot and cook until they turn pink and opaque, about 3-4 minutes

Season with salt and pepper to taste

In a mixing bowl, combine flour, baking powder, salt, shredded cheddar cheese, milk, and chopped parsley to form a dough

Drop spoonfuls of the dough into the simmering soup

Cover and cook for 10-12 minutes, or until the dumplings are cooked through

Serve the soup hot, garnished with the crispy bacon
